Last week, University of Glasgow staff member Lynn Esson lived on just £1 a day to raise funds for anti-poverty organisations.

Last week, University of Glasgow staff member Lynn Esson lived on just £1 a day to raise funds for anti-poverty organisations.

Lynn who is PA to Head of College for Science and Engineering took part in the Live below the Line campaign.

Over 30,000 people worldwide participated in Live below the Line which challenges people to spend no more than £1 a day on food and drink for five days.

Lynn said: “For many millions around the world food poverty is a real issue but there are still many of us who would like to spend less on food.  I wanted to challenge myself to eat for £1 per day by using fresh and store cupboard ingredients, make food I regularly enjoy and show how, with a little planning, we can still eat healthily for less."

Lynne successfully completed the challenge and documented her experience on her blog.
