Research title: Strategies for improved nutritional content and sustainability of milk - a farm to consumer approach
I am currently in the first year of my PhD under the supervision of Dr Emilie Combet and Dr Stuart Gray. My research is focused on novel solutions and strategies for optimising the nutritional quality of milk. I'll be particularly focusing on improving omega-3 and iodine content, whilst also looking at production strategies that optimise dairy cow metabolic health and reduce methane emissions. I have a BSc in Nutrition from the University of Nottingham and Master of Research in Food Policy and Food Systems from Queen Margaret University, Edinburgh. Prior to returning to education I was a chef for 14 years where I had the opportunity to engage with our food system from production to plate.
